Migrants and refugees settling in Australia since as far back as the early convict settlers through to todays refugees have all had a strong influence in not only shaping our society, culture and prosperity as a nation, but what and how we eat.
Today one in four of our 22 milion population was born overseas, so it’s no wonder we eat such a diverse array of food.

Traditionally the Australian diet was predominantly based on our early settlers' diets, but after the Second World War with the large scale migration of refugees, laborers and assisted passage migrants, our palates were slowly being changed.
